History
Graeter's was founded in 1870 by Bavarian immigrants Regina and Louis "Charlie" Graeter. Note: Charles Graeter, age 17 was shown in the 1870 Cincinnati census as an Apprentice Confectioner working for Arthur Paulus (1845-1907) age 24. He was a Prussian immigrant who came to Cincinnati in 1866. Paulus was listed as a Confectioner and owned an Ice Cream Saloon. This is where Louis Charles Graeter first learned the ice cream making trade. After Charlie's death, Regina took over the business, opening new locations and continuing operations. Graeter's remains a family-owned and operated business at present.

Product
Graeter's ice cream is made using the French pot method. All their ice creams are created from an egg custard base. After pasteurization, the flavorings are added. The custard and flavoring mixture is placed into two-gallon French pots. The pots are then spun in -14 °F (-26 °C) saltwater, while a blade scrapes the cream that freezes against the sides of the pot. After 15-20 minutes of immersion in the saltwater, any larger additives are mixed in, such as cookie dough or chocolate chips. Ice cream is hand-scooped into pint containers. Graeter's makes 3,200 US gallons (21,000 imperial pints) each day.
